Zutaten
8 char- & zanderfilets {boned}
juice of one lemon
For the coating:
flour
3 eggs
salt & pepper
breadcrumbs
250 ml sunflower oil {to fry}
For the tomato rice:
2 pkg. rice
4 tomatoes
300 g puréed tomatoes
salt & pepper
1 shot olive oil

For the tomato rice:

300 g puréed tomatoes

For the fishschnitzel: Prepare 3 bowls or 3 deep plates. Put flour in one bowl. Put the eggs into the second bowl beat them and season with salt & pepper. Put the breadcrumbs into the third bowl. Flavour the fishfilets with salt, pepper and lemon juice. Put the filets in the flour and turn them around. Then put the filets into the second bowl with the eggs and pull them through. At last put the filets into the third bowl with the breadcrumbs and push dem a bit so they are fully covered with them. Heat enough oil in a pot. Put in the breaded fishschnitzels and fry them. Turn them around a few times until they are crunchy. Then put them out of the oil and let dem drip-off on kitchen paper.
For the tomato rice: Cut the tomatoes into small pieces. Heat some olive oil in a pan. Add the tomato dices and the Uncle Ben’s Express Reis. Serve the fishschnitzel with a slice of lemon and the tomato rice.
