Easy recipe for delicious apple rice cake. This rice cake has a perfect freshly taste with apples and cinnamon.

Ingredients (for the short pastry):

250 g powder

100 g butter

120 g sugar

2 eggs

for the filling

300 g short grain rice

800 ml milk

some grated vanilla bean

130 g sugar

4 apples

400 g light mascarpone

1 TL cinnamon

Preparation:

For the short pastry: knead the cold butter with the powder, the sugar and the eggs. Coat a 24 cm springform with the short pastry and put it in the fridge meanwhile.

Cook the milk with the sugar and the grated vanilla once. Add the short grain rice and cook it for about 20 minutes by stirring constantly. Peel the apples and cut it in small slices. Let the milkrice cool down, stir in the mascarpone and put half of milk rice in the baking dish. Add the apples and pour the rest of the milkrice in the baking dish. Bake it at 175° degrees air circulation for 40 to 45 minutes (until the rice mass is stiff).
