A very healthy recipe for healthy couscous salad. Perfect for parties but also a wonderful picknick or dinner recipe. Couscous salad veggie style.

Ingredients (for about 15 small servings)

500 g couscous

500 ml water

1 yellow and 1 red pepper

400 g feta cheese

1 glass black, pitted olives

250 g cherry tomatoes

juice of one lemon

herbal salt and pepper

extra virgin olive oil

Preparation:

Cook the couscous after packing instruction. Remove from heat and let it cool down.

Clean the vegetables and cut it in pieces. Cut the feta also in peaces. Put all ingredients in a big glass bowl. Juice the lemon. Marinade the couscous with the lemon, the olive oil, herbal salt and pepper.
