Nothing in the fridge but very hungry? This roasted garlic soup is an easy idea without a big fuss. This ingredients for roasted garlic soup are (nearly) always in your fridge and you this fast but delicious roasted garlic soup is ready in a few minutes.
Ingredients (for 2 servings)
1 big onion
4 garlic cloves
3 tbs of olive oil
1 spoon flour
500 ml of vegetable broth
2 slices of stale bread or toast
150 ml cream (if you want to use sour cream or fat reduced cream)
salt and pepper
Preperation:
Peel the onion and the garlic cloves and cut them into small pieces. Heat olive oil in a pot and roast the onion and the garlic. Dust it with flour and pour the roasted vegetables with the broth. Tear the bread in pieces and put it in the bowl. Salt and pepper it and cook the soup for about 10 minutes. Puree it with a blender in a creamy and fluffy soup.
Cut some bread croutons and roast them crispy in a little bit olive oil.
Serve the soup with the fresh herbs and crispy croutons.
