An easy recipe for quick dinner or for brunch or picknick. These recipe for greek rice salad is healthy but delicious and can be prepared easily.

Ingredients:

1 cup brown rice

1 cucumber

2 yellow peppers

200 g cherry tomatoes

salt & pepper

400 g feta cheese light

for the dressing :

60 ml olive oil

juice 1/2 lemon

80 ml ​​red wine vinegar

2 tbs green herbs (dried)

salt & pepper

1 tsp tarragon mustard

Preparation:

Cook the brown rice in the double amount of salted water for about 10 minutes. Let the rice cool down. Peel and the pepper and the cucumber and dice it in small pieces. Wash the cherry tomatoes and quarter them. Add the vegetables pieces to the cooked rice.

For the dressing: Mix all ingredients in a closeable glass and shake it. Marinade the greek rice salad with the dressing and leave it in the fridge for a few hours.
