An easy but very delicious iced latte macchiato dessert that even looks and tastes like latte macchiato but in a sweet dessert form.
3 egg yolks
50 g sugar
120 ml espresso
1 vanilla bean
250 g whipping cream
Beat the eggs with the egg yolks over a waterbath until fluffy. Add the espresso and the vanilla marc. Beat the whipping cream until stiff and stir it in the esspresso-egg mass. Fill it in cooled Glasses and cool it down in the fridge for at least six hours or overnight. Leave them at room temperature for about 20 minutes before serving.
Tipp: If you want put halv of the espresso in the glasses and freeze it in the fridge. Fill the cream in the glasses after the espresso freezed.
