A very quick recipe for a one pot chicken rice soup. The perfect one pot soup recipe for the whole family.

Ingredients (for 2 servings)

200 g chicken filets

150 g long grain rice

1 large or two small carrots

1/4 broccoli

1 onion

1 garlic clove

100 g low fat cream cheese

500 ml vegetable broth

salt & pepper

if you want it spicy: 1 chilicote (for kids use maximum 1/2 chilicote)

Preparation:

Clean the vegetables. Dice the onions, cut the carrots into slicesand pluck the broccoli into florets. Optionally cut the chilicote into thin slices. Cut the chicken breast in pieces. Put all ingredients in one pot and cook the soup for 20 minutes.

If you like to cook the long grain rice in an own pot and sere it and additionally serve – so everyone can decide yourself how much rice they want.
