This simple, but delicious and easy recipe for potatoe noodles with tomatoes & sage butter is the perfect family meal. By using wholemeal and fresh tomatoes its very healthy for kids and adults. Fine taste by sage butter.
Ingredients:
400 g potatoes
200 g wholemeal flour
fresh sage leaves
2 eggs
salt & pepper
150 g cherry tomatoes
freshly grated parmesan
Preparation:
Peel the potatoes and cook them. Press it through the potatoe ricer in a big bowl. Add the wholemeal flour and eggs. Flavor it with salt and pepper.
Knead it to a solid dough. Halve the dough and form it to a roll. Cut it in pieces and form some noodles as thick as a finger. Prepare some water, add the noodles when the water is simmering and cook it for 3 minutes.
Heat some butter in a pan. Add the cooked noodles and brown the noodles. Add the sage leaves. Halve the cherry tomatoes.
For the dip:
200 g plain yoghurt
juice of a half lemon
1 garlic cloves
2 tbs. provencal herbs
2 tsp. mustard
preparation:
Peel the garlic cloves. Put all ingredients in a small bowl and beat it until creamy. Flavor it with salt & pepper.
Tip: the dip even better if you put it in the fridge for a few hours.
Serve the potatoe noodles with the sage butter and the fresh tomatoes with the dip. Top the noodles with some fresh grated parmesan and enjoy the potatoe noodles with tomatoes & fresh sage butter.
