Easy recipe for red shrimp curry with basmati rice. Very creamy, delicious and easy in the making.
Ingredients (for 2 servings):
700 g prawns
250g basmati rice
1 green pepper
1 red pepper
2 – 3 carrots
1 onion
1/2 ginger
3 garlic cloves
600 ml coconut milk
200 ml vegetable broth
juice of one lemon
2 tbs. of curry
1/2 chili powder
salt and pepper
1 tbs. paprika powder
5 tbs sesame oil
Preparation:
Cook the basmati rice in the double amount of salted water. Peel the onion, ginger, pepper and garlic cloves and cut it in small pieces. Peel the carrots and cut it in slices. Roast the vegetables in sesame oil and spice it with the curry, chili and paprika powder and a litte bit of salt and pepper. Roast the shrimps in a separate pan for 2 -3 minutes. Serve the curry with the rice and top it with the baked prawns.
Tip: Reduce the oil and use light cocos milk for a calorie reduced version of the red shrimp curry.
