Ingredients for 4 people:

For the salmon tartare :

500 g fresh salmon fillet ( without skin and bones )

1 spring onion

1/2 garlic clove

juice of 1 lemon

1 tsp honey

150 g crème fraîche

freshly grated horseradish

For the mashed potatoes :

600 g potatoes

200ml milk

freshly grated nutmeg

1 tsp salt

some butter

salt & pepper

For the herbal dip:

1/2 bunch of fresh herbs (parsley, chives and basil)

150 g sour cream

salt & pepper

some fresh lemon juice

Preparation:

Dice the salmon finely and put it on a cool place. Clean the shallot and the garlic and dice it in small pieces. Mix the salmon with honey, lemon juice, olive oil, the shallot and the garlic pieces. Stir in the créme fraiche and spice it with salt and pepper. Swipe it in the fridge.

For the mashed potatoes: peel the potatoes and cook them in salted water. Press the cooked potatoes in a pot. Stir in the hot milk with a whisk, flavour it with nutmeg, salt and freshly grated horseradish. If you want to stir in some butter for a better taste.

For the herbal dip: wash the herbs and exempt from stems. Put the sour cream and the roughly plucked in a high pot. Spice it with freshly squeezed lemon juice, salt and pepper and blenderize it to a smooth, herbal creme.

Serve it in a glass or on a plate and garnish it with tomatoes and herbs.
