Fine recipe for a green herb sorbet made of spring herbs – perfect green spring color!
Ingredients: (for 6 servings)
100 g fresh herbs ( rosemary , lovage, lemon thyme , lemon balm )
70 g sugar
2 egg whites
lemon juice of one lemon
150 ml white wine
Wash the herbs and chop them finely. Squeeze the lemon. Puree the herbs with some water, lemon juice and the sugar until creamy. Add the white wine. Seperate the eggs and beat the egg whites until stiff. Add the egg snow in the herbal mix. Freeze it for about 4 hours, stir the sorbet every 30 minutes. Alternatively put it in an ice machine if you have one.
The herb sorbet can be served with herbs or champaign.
